Pigato is an indigenous varietal of Liguria di Ponente, the 75-miles shore between Savona and Ventimiglia. It is a relative of well-known Vermentino, but Pigato is more full-bodied and aromatic than its famous cousin. This wine is straw yellow and is fine and elegant with notes of flowers and aromatic herbs: sage, myrtle, rosemary and thyme. It also has attractive yellow floral aromas and baked apple along with a note of banana peel. The creamy palate delivers golden apple, pear, thyme and lemon along with crisp acidity along with a revival of an enjoyable salinity, persistent on the palate, with a mellow, dry finish. Lovely with roasted fish with Ligurian olive oil; pesto sauce pasta; stuffed squids with pine nuts and olives; stock-fish with potatoes and rosemary.
