Ioppa's sole white wine is a blend of Erbaluce and Timorasso, two very old school, native varietals. Timorasso was at one point so rarely found it was in danger of being lost to history. It is fermented entirely in stainless steel and doesn't see any oak in order the preserve the purity and minerality that Piedmontese white varieties are known for. It’s racy and bright with notes of stone fruits and melon. Ioppa is one of those family producers that stick with old school methods, farming sustainably, hand harvesting, and vinting with precision, passion, and finesse.
