East of Verona and within the Classico zone is a special factor that elevates the Classico and Superiore wines above ordinary Soave: a band of ancient volcanic soil which benefits the terroir and confers on the wines a salty, smoky, bitter quality that makes a nice complement to the almond and citrus flavors that are typically found. This wine is luminous and crisp with elegant mineral tones next to steely white notes of sliced apple, pear and lemon rind with shadings of peach. It is beautifully balanced and elegantly tempered, but also shows restraint. The crisp acidity brings it alive in the mouth for a very appealing and well balanced, pleasing bitter almond finish. Perfectly paired with Chinese take-out.
