New Mexico? Yes, New Mexico! The Chardonnay grapes behind this bright, citrusy, pale-yellow sparkling white are grown in conditions that are just as ideal as in the famous Champagne region of France- super high elevations, chalky soil, lots of sun during the day but enough cool evenings. This one follows the traditional méthode Champenoise, which means that it undergoes a second fermentation in the bottle to produce natural carbonation. Sauvage actually ages in the bottle for two years to pick up a bit more yeasty flavor, which supports the green apple, grapefruit and lemon notes.
