This is a funky, fun white! Coming from the region producing the world famous Cava, from the main Cava grape, pronounced Shar-el-low. Unfiltered and unfined, there is a light sediment, and layers upon layers of flavor! This is a wine that evolves from the first glass to the last, it’s so fun to see!! Jumping out with zippy, zesty citrus, chalky minerality, scrub, and herbal aromatics on the start it transitions to reveal overripe citrus, juicy stone fruit and melon, dried floral scrub, and herbal expressions. The citrus driven acidity balances scrubby minerality and soft earthy fun to make this one of the most dynamic wines we’ve seen in a while!
