“Ripasso” means “repassed” & refers to its production process where Valpolicella is added to a cask containing the skins and lees left over from Amarone. The end result is a wine that retains the vibrancy of Valpolicella but is dark in color, bigger, more flavorful and complex than the original wine big enough to go with stews, braised red meats, game and aged cheese. The Cesari Mara is ripe, warm, and round, this Valpolicella balances acidity and alcohol with gusto. A lingering aftertaste, replete with dark current and a slight raspberry rip, hangs out on the palette like a long sunset. Or sunrise, if you’re a morning person.
